Jerusalem artichokes will sprout and produce tubers even if left unattended, but our Jerusalem artichokes are cultivated by tilling the soil every year and carefully planting them evenly on raised mounds.

We often hear that Jerusalem artichokes growing wild in the mountains are bitter, but ours are highly praised for being very sweet and delicious even when eaten raw.
